Ernest	3.4 Konteki "Tears of Dawn" Daiginjo Bottle. No head. Body is almost colorless. Aroma is notes of honeydew, unripe banana, kiwi, rice. Flavor is moderately sweet, lightly acidic. Finish is lightly sweet, lightly acidic. Medium body, silky/watery texture, no carbonation, moderately alcoholic. Pleasant and clean, if not exactly exciting. Sunday, January 2, 2022
Ernest	3.5 Konteki "Pearls of Simplicity" Junmai Daiginjo Bottle. No head (still). Body is colorless. Aroma is notes of banana skin, honeydew, alcohol, pineapple, grain/rice. Flavor is moderately sweet, lightly acidic. Finish is lightly to moderately sweet, lightly acidic, lightly bitter. Medium body, watery/oily texture, no carbonation, moderately to heavily alcoholic, lightly astringent. Very nice fruity aroma starts things off well (alcohol is a bit glaring, so don't take deep inhales). Decent flavor balance, but a bit more acidity would help. Kinda slick with a burning finish, but not unpleasant. All in all a quite solid sake. Saturday, March 16, 2019
ClarkVV	3.7 Konteki "Tears of Dawn" Daiginjo 375mL bottled April 2018, drunk 11/3/18. Clear, light butter-tinted white. Smells floral and showing hints of tropical fruit with almond meal, light vanilla and hints of cherry, as well. Not alcoholic and no sharpness whatsoever, though it's also not quite as bright and intense as I'd hoped, even drinking it at room temperature. But it's clean and flawless with light sweetness throughout and light fruit character lingering (pineapple, kumquat). In the mouth it's soft, fairly light on the palate, with a hint of stickiness to it from the light sweetness. Alcohol is felt as dryness only. Floral notes lead to almond skin, vanilla and hints of pineapple and cherry. Very easy drinking, though perhaps not quite as complex as I'd hope for from a Daiginjo. Monday, November 5, 2018

Very sweet, nearly dessert levels of sweetness. Some honeysuckle. Taste is sweet, koji, honey suckle, flowers, licorice, and a very light savory umami flavor. Hefty mouthfeel. Smooth.
