1.8 liter bottle from Takimoto. Clear, thick. Rich rice nose, fruity, peach, apple, just a touch of yogurt. Nice acidity although the funky yamahai aspect is a bit mediated by the unpasteurized freshness. Very drinkable and nice.

720 ml bottle from Hanshin Dept. store. Spicy ginjo-ka nose with peaches and apples. Surprisingly a light yellow tint to it. Sweet and very fruity and spicy. Not quite as full-on in rice and body as the junmai version but lighter and a bit more ethereal and still great.

Fantastically well balanced light sake. If you told me this was 8 or 9% alc. I would believe you. Melon fruit, lychee, musk, orange rind, green apples, semi dry finish. Rich. I have had better Daiginjos but aside from that sub style this is about as good as I have had.

720 ml bottle. Quite fruity nose, peaches, lemon, only light yamahai acidity. Clear, oily. Lots of citrs fruit, ginjo-ka, surprisingly, acid but light and not lactic. Smooth, silky. Medium body. Low yamahai character, but still nice.

Large format bottle pour into wine glass taster at Asano, Umeda, Osaka. Shared with biggirlpanties and KyotoLefty. Metallic blue calligraphy on white label, green glass. New bottle design or perhaps this is the Japanese bottle design.

Clear water pour as expected, big legs. Softer aroma with moderate flowers and herbs. Taste begins hot, moves to spices and herbs. Mouthfeel is medium body but silky. Quick finish, no warming alcohol lingers. Definitely solid, but I much preferred the other sakes from this shuzouten.

Taste is fantastic jasmine, huge flowers and perfumey oils. Ultra soft body, easy drinking, some sugar balance. Herbal, floral, robust. Really outstanding.

12 year bottle. Shared with KyotoLefty at Asano, Umeda, Osaka. Yellowish gold pour, clear, chardonnay wine look especially in the wine glass taster. Clear, good legs. Crazier gamey honey nose - certainly a new experience for me with sake. Taste is like a mead/sake blend. It’s thicker, syrupy, gamey honey focused. There’s no alcohol apparent. Easy, quick finish. Reminds me a bit like homebrew mead. Fun one to try.

Glass at Seiyo, 9/14/15.
Clear liquid, with a very light beige tint.
Nutty, not overly perfumey nose suggests some earthier notes, cellar mustiness perhaps as well as very light vanilla and cream. Really characterful, though, with heavy koji and light alcohol notes coming together.
Some alcohol up front gives way to rice sugar and trace floral notes, though predominantly a creamy, rich, nuttiness with almond, light pineapple and more mustiness. Quite good and as usual, my powers of description are very limited when it comes to sake.

700ml bottle. Sharply acidic nose, very fruity, orange, grapefruit, koji, rice, light cedar and spice. Shiny and clear, a bit icy. Crisp, sharp flavor, good acidity and fruit, light cream. Very light and crisp for a yamahai junmai. Very delicious. Lightness makes it seem more like a more refined ginjo.

Bottle, at Yard House Houston. It’s a clear, almost colorless sake, flat and lighlty oily. Some lemon and a generic fruityness in the aroma. Hints of rice and prunes. And some alcohol of course. It’s dry, soft, warming and lightly oily on the palate, with flavors of fruits dominating. Rice, green apples, some prunes and lime too. Lychee hints. Lasting finish. Overall a bit warming this one, but quite tasteful. 140516

Aroma is full of fruits - strawberries, melon and peach, in addition to some floral tones and light alcohol character. Mouthfeel is a touch boozy upfront with notes of strawberry and peach following. Additional flavors include light flowers, grass, sweet rice wine and light fruity yeast.

720 ml bottle from Nishimura in town. Nama version. Nice nose, fruity, very dusty, some acid, spice, and a bit of funk. Not hugely wild, though. Clear and icy. Very nice acidity in the mouth, with good funkiness and alcohol there too. Fruity, some esters like the regular ginjo, but more acid. Still quite sweet and fruity, but the yamahai makes it a bit more challenging, if a little less perfect and polished. I like this a lot, more intriguing though not quite as dynamic as their great ginjo.

720 ml bottle. Limited release nama version. fruity, slightly dusty ginjoka nose. Pears, apples, light banana. Clear, slightly icy and oily. Fruity fruity and rich. Melon, peach, light banana, pear. Drying alcohol heat in the finish balances the moderate sweetness. Full and smooth, though not heavy at all. Very nice. Interesting, dry, ethereal flavors coming out as well. Can’t put my finger on it, but very original.

Bottle from a sake shop in Saitama, 07/20/2013. Pours silvery clear. Aroma is sweet, with tart green apple and berries, clean rice finish. Taste is also sweet, green apple and crisp pear, tangy in the middle, toasted rice to balance, boozy heat lingering on the breath. Medium body, remains silky and not sticky. Well done, rich but not over the top with sweetness for something with 35% polish. Very nice.

Pours clear and still with some nice legs on the glass. Smells of rice, strawberries, some fruity hints, touches of honey. Tastes sweet/dry with some nice fruity undertones and a hint of pears on the finish. Enjoyable.

Bottle. Melon, tropical fruits, and a note that almost put me in mind of parmigiano cheese. Very light gold in color. Mild and gentle; a lot of fruit, especially melon, guava, and papaya laced with mint and camphor. Smooth and creamy; very velvety on the palate. Lovely.

Bottle. Asian pear, white pepper, floral notes, and a very faint lactic or yogurty edge on the nose. Very light gold. Mostly dry, with juniper and herbal notes; it reminded me of gin at the front of the palate. Finish dries quickly and cleanly. Would make a great aperitif.

300 ml bottle at Sake Gura. Pour is still clear slight viscous- has some legs in the small glass. Aroma is lots of peaches, grass, and lots of rose petals, light white grape must, and hints of strawberries. Strawberry in the flavor comes out more than the aroma- especially when warm and blends well with the peach tones to create a peach/strawberry ice cream that I get at the sushi place near my work. Finish is lightly sweet, floral, light rice winey- slight solvent, alcohol is hidden well in the thickness, but still dries out nicely in the end. Very awesome Daiginjo and for $25 for 300ml at a high end restaurant seemed like a very good price for the quality. Great stuff! One of my new favorite Daiginjos.

Glass @ Bamboo Sushi, PDX: Pours clear and lively. The nose is clean and full with notes of rose petals, kiwi and fresh koji. Mellow mouthfeel and virtually non-existant impact. Clean body and a rich rewarding tail with smooth banana and maple notes towards the finish. Very nice sake.

(720 ml bottle via trade with BMan1113VR, thanks Andrew!) Served lightly chilled. Pours light, pale yellow, appears mostly clear but perhaps has a very slight haze. Some very light bubbly effervescence appears briefly. Aroma of strawberry, peach and apricot. The aroma is kind of gentle and somehow not sweet or syrupy despite the fruit notes. Mouthfeel is light but has a nice yeasty fullness. Flavor of fruit - strawberry, peach and apricot. ABV is fairly well-covered, at least relative to other sakes I’ve had. But this stuff packs quite a punch - wow! As it warms the fruit becomes a little more grapey, and a little more yeasty warmth emerges. Look forward to trying more of this style to compare.

Not water-colored like many of the sakes I’ve had; a bit off-yellow. Distinctly sweet aroma of anise and exotic fruit, with more common fruits in the flavor, especially the melons. Tart yet sweet. Restrained alcohol. I didn’t particularly enjoy this, actually. I had this on the patio at W.A. Frost’s, St. Paul, MN.

Pewter yellow clear with some legs. The aroma is of melon and grape, white chocolate. The flavor is much the same, a bit dry, with a slightly sea like quality. Overall, quite nice.

Bottle. An opaque milky white after extreme agitation before pouring. Even this failed to dissolve all of the particles - gorgeous. A very fruity aroma with a faint hint of an allergic reaction to mold. Earthy (nutty as they’d put it) on the body with a mostly fruity/floral finish. An excellent sake.

Slightly yellow stained clear and still liquid. Floral and ricey nose, with rubbing alcohol accented stepped on fruit, raspberries, maybe even pineapple. Wow, smooth ghost-like cashmere mouthfeel leaving memories of soft, delicate fruits..Peaches & cream, a little funk, and a nice sweetness riding along. This is stellar drinking right here.
