3.3 Il Chiostro Once Upon a Time 22nd April 2017 Six or seven year old bottle. Opaque dark brown beer, very thin and short lived pale tan head. Palate is light, fairly dry and has reasonable fine carbonation. Smooth dark malts. Mellow soft generic spice, trace of cinnamon perhaps. Tangy crystallised fruits. Sherry, madeira and caramel. Some orange squash on the back end. Light finish. Plenty going on here but for me the flavours are not really harmonising that well with each other. Interesting enough to engage the brain but my heart remained unmoved. Sunday, April 23, 2017

3.7 Il Chiostro Oud Bruin On tap @Bir&Fud (Rome). Deep ruby/brown color with a thin white head. Aroma is vinous, red fruits, yeasts, vinegar, oak, powerful! Flavour is rich and complex, sour with a lot of vinegar in the end, a bit rough but impressive. High body, medium to light carbonation. It could be refined, but it’s a very interesting beer! 3.8 Il Chiostro Oud Bruin Dark brown Amber color. Smells like bijou, sour nose with tons of oak. Very strange. The mouth is surprisingly light, not too tart. The beer is light but the alcohol really sneaks up. Not too tart, but lots of oak in the mouth. Green apple pop up. Nice stuff. A surprising brew. Friday, April 17, 2015

Corpo medio, carbonazione medio-bassa. Una signora birra! Sunday, March 30, 2014

3.4 Il Chiostro Singel Absinthea Pours cloudy and pale yellow with a medium white head. Aroma has a sour lemon quality with a pronounced yeast presence and a hints of wormwood. Taste is definitely bitter - no holding back - but otherwise lemony and kinda refreshing. The finish goes back to bitter, but in a more subtle way. You would think that there would be a licorice flavor in there somewhere due to the Artemisia absinthium, but no. There is, however, a fleeting flavor that’s hard to pinpoint. Interesting and good. 3.2 Il Chiostro Scottish Ale Bottle brought back from Europe by my mom and sister; poured a gold-amber color with an off white head. Aroma of grain and sweetness. Monday, February 18, 2013
