Ichishima Shuzo Omon Daiginjo Gokukara Super Dry Sake
300m bottle from Japan Centre. Clear very pale yellow colour, no head and aroma of rice, fruity, melon, boozy. Taste is rice, musty, melon, some fruity notes, and grassy alcohol burn. Medium bodied, low carbonation, drying warming boozy finish. Quite drinkable.

Ichishima Tokubetsu Honjozo Sake
Bottle from Saké-Konror, Berlin. Fruity winey nose, semi-dry. The beginning is fruity and not too deep. Really round and smooth, very easy to drink, refreshing with a dry and short aftertaste with fruits and crisp body. Not much ricey sweetness there, very dry with a quite watery but mellow ending. Nice sessionable brew.

Ichishima Junmai Sake
Bottle. Transparant pour. Aroma of that typical cloying sake yeast, vanilla and fruit. Taste has thick sake yeast flavor, rice, mild sweet citric fruit like lyche and some boozyness. Never rated sake before, I find it a bit difficult to pinpoint the flavor. Had to get used to the taste a little, but I kinda like it.

Bottle Pour. Clear. Very sweet, fruity nose. Sweet and fruity flavor, grapes, melon, candy, citrus. Far to sweet for me, more like a cocktail for kids. Drinkable, but not my thing at all.

Karen "Coy" Junmai Sake
This bottled Sake from a bottle shop poured no head and no head bubbles with an uncarbonated transparent clear colored body and no lacing. The mild aroma was rice and floral. The semi-dry mouth feel was weakly tingly at the start and at the finish with a mellow sweet aftertaste. The ok flavor contained notes of rice and alcohol. A decent one that I would consider drinking again. Again no typical alcohol burn.

Ichishima Seishu Sake
Finally got fifth futsu-shu they were having tasting from this brewery and grabbed a bottle, been popping into shops all over city hoping for some cheap sake but glad actually got a decent example. Clean nose of almonds and stone fruit. Tastes of grainy unpolished rice, light stone fruit, almonds, yeast. Light refreshing fairly clear body.

Ichishima Oumon Toshiwa Ginjo Koshu Sake
Damn this sake ticking is an expensive hobby, expensive but delicious. Pours quite yellow flat water like. Nose is faint minerals and melon. Tastes of minerals, earth, melons, nutty, florals, perfume. Very smooth palate and great depth of flavor. Not quite as robust as previous koshu I’ve had but silky smooth and delightful.

Ichishima Oumon Yume "Dream" Junmai Daiginjo Sake
Taster at Asano. Slightly funky nose, rice, vanilla, cream, fruity yet dry. Big body with very nice acidity. Comes across like a yamahai. Very flavorful and enjoyable.

Ichishima Shuzo Honjozo Sake
Named Tokubetsu Honjozo on white and orange bottle but all my search leaves me to believe this is one in same. I have a big hike tomorrow but need the sake assitance to go to bed early enough. Pours just like water with nice nose of vanilla and pine nuts. Tastes of light spice, vanilla, nuts, hint of honey dew. Smooth palate only slight alcohol.

Ichishima Yume Junmaishu
300 ml bottle purchased at Empire Wine in Albany, NY. Consumed at room temperature. Pours clear. Pleasant aroma of rice with some mild sweetness. The flavor is rice again with a touch of sweetness and slightly smoky. Not as round or as creamy on the palate as I would expect from a junmai. Notable alcohol burn at the finish. On the lighter side of medium bodied.

(Glass @ Aki, Brunswick, ME) Lightly chilled. Clear. Smells fruity, sweet melon, yeast, rice. Palate is smooth, silky. Flavor is fantastic - mirrors all notes of aroma, with the fruity melon standing out. "Lower" ABV is well-integrated, keeping this from being a real burner, like lots of other sakes.

Handbottle courtesy of Bman1113vr. Very clear, water color with no head or carbonation. Aroma is light berry, rice cake, leaves and dry alcohol notes. Watery upfront with a sharp alcohol bite. Sweet Asian roots follow with some sweet flavors to finish. Very warming, with a grainy chemical finish.

Thanks to bu11zeye for sharing this bottle. The sake has a great aroma with a ton of fruit. I get some melon as well as some other fruits that I can’t quite pick out. The flavor is more of the same, with a lot of fruit, caramel, brown sugar and vanilla. Very easy to drink. The alcohol is very well hidden. A great sake. One of the best that I have tried.

Ichishima Oumon Ginnoyorokobi Competition Daiginjo Sake
Sake rating #100 for me. Bottle ($159). Pours with a crystal clear body with maybe a slight tinge of color. Legs are like waves on the side of the glass and appear to be laser etched. Aroma is bursting with fruit that stays in your nose for a while. Lush strawberries, delicate stone fruit, light woody and earthy tones in the back end. Koji presence is light, alcohol is nearly completely hidden. Possibly the cleanest and best smelling normal (non taru or koshu) sake that I have had. Flavors are big and bold. Slightly meatier than the nose. Huge duration, with medium to light sweetness (moderately dry even). Lychee, banana, stone fruit, light caramel and vanilla notes. Quite an interesting daiginjo! Huge duration. Very clean, perfectly balanced, with zero alcohol detectable. Then there is the best part of this sake. The mouthfeel! This is way above and beyond any sake I have ever had. It is completely mouthcoating, but in a different way than a heavy beer (it doesn’t feel heavy). It is velvety smooth and seems to hit every inch of your mouth and tongue and once. This stuff is silky in both smoothness and texture. Quite an amazing sake!

(720ml bottle) clear still body with absolutely excellent alcohol legs. Nose of rice milk, alcohol and nuts. Taste is nutty, woody, alcohol, smooth and a mild amount of alcohol. Full bodied and very dry with a long alcoholic duration.

(500ml bottle) still, clear with no legs. Nose of powdered sugar, coconut milk and not a hint of alcohol. Taste is very sweet, exceptionally smooth, coconut, light toastiness, cucumber. Refreshing, smooth, medium dryness with a sweet finish. I didn’t detect a bit of alcohol in this. Really nice and smooth.
