Shinomine Yamadanishiki Junmai Ginjo Kashoku Nama Sake
Had the summer 2016 fresh namazake at Naraizumi Yusai. Very pale. Bright, a bit appley, sort of dry in the finish, with a floral koji hit at the end.

Shinomine Yamadanishiki Junmai Chōkarakuchi Sake
Glass at Jam. Very nice and big aroma of strawberry, plus grapefruit. Very crisp and floral, finishing quite dry. I like a karakuchi that is this fruity and floral before drying out.

Shinomine Yamadanishiki Junmai Ginjo Kashoku Nama Sake
Taster at Jam. Oily appearance, thick. Light fruit and spice nose. Full fruity flavor, rich and thick, melon, mango, funky koji, peppper, alcohol. Great stewed fruits. Good stuff.

Shinomine Juji Cup Junmai Ginjo Sake
This is the first sake I ever took notes on, so I’m not all that confident in my appreciation of the style yet. A little less than clear, maybe a touch of yellow or tan. Smooth, thick body. Flavor is sweet and semi-fruity, with some earth notes (I assume from the rice) and alcohol. I really enjoyed this cup o’ sake. Rating this makes me feel like a newbie all over again, I love it! Ha. Thanks for entering this, BuckDich, I would have never been able to figure it out.

Shinomine Juji Cup Junmai Ginjo Sake
Cup Sake @ Buri: Light beige, eggshell color, clear legs, thick. Nose of banana and rice, light koji and some sweet ricey notes. The flavor is thick, a chewy chestnut note in the mouthfeel and a creamy semi-sweet finish. Very nice, not fruity, but full in body and nuttiness.
