Metalchopz	4.2 Siboire Trip d'Automne Lightly hazed-unfiltered, bright yellow colour with a big creamyish white head, good retention and full lacing. Lemon aromas with blended herbal notes and beautiful Belgian yeast. This continues into the flavours. Tiny particles like spices floating around and very nice carbonation. Quite a nice stronger beer, that blends beautiful herbal notes, mild lemon zest-sourness and Belgian yeast spiciness. Wednesday, February 14, 2024

czar	4 Siboire VA fresh enough can that pours almost clear light but bright gold with a nicely creamy white cap offering some retention, strong lacing tho. fresh cereals, delicate spicy herbs for a quasi noble, quasi terroir hops, pils allure in its doughiness but clearly a bit fruitier with juicy pear orchard notes, no phenols tho, white pepper with a pinch of dirt. moderate carbonation, light body, smooth and balanced herbal-spicy finish. fresh and very convenient local lager. Arôme malté/houblonné riche et agrémenbté de nuances vineuses, boisées, de Bourbon, de sucre d'orge et de vanille. En bouche, c'est goûteux et capiteux. czar	4.2 Siboire IPA Test #109 (Enigma, HBC 630, Nelson Sauvin) fresh enough can that pours kinda hazy pale golden with a small white cap offering good enough retention and lacing. very powdery citrus, dried mango powder, kinda galaxified without too much galaxy (i do know that no galaxy has been harmed in the process), grapes and sweet white berries, doughy enough pineappled maltiness, just enough new E esters - clean and mildly fruity yeast action. moderate carbonation, light body - very oily for its abv; smooth and balanced tropical-citrusy finish. always a five point five per cent treat - good hop trio. very solid new england pale ale. dandeman	3.5 Siboire 20 D'Orge du Nord Gushing à l’ouverture de la bouteille. Olfactif au caractère malté sucré rapidement envahit par des notes vineuses légèrement acidifiées. Présence également de notes de cassonnade, de cerises sauvages et accents tropicaux de houblons. Liquide brun rougeâtre et voilé. Mousse abondante et persistante. Réchauffante à l’entrée de bouche avec un caractère acidulé vineux et des notes de Porto bien senties. Le caractère malté est également bien présent et sucré avec ses notes caramélisées. On sent également la présence du Whisky surtout en finale, conférant à cette dernière une sécheresse plus prononcée. Les notes tropicales des houblons se répètent en bouche. L’amertume est cependant assez douce. Des notes de cerises sauvages sont également au rendez-vous. Le corps est ample et la carbonatation moyenne. czar	3.8 Siboire Impérial Express on tap at winter warmer 2023, quebec city. unclear very dark brown with a small beige cap offering some retention and lacing. super dark french roast espresso beans, ristretto, needless to write coffee upfront, peppery roasted caramels, spicy and earthy resins. moderate to low carbonation, light body- oily; semi-dry caramel-coffee finish. if it’s your thing, it’s a super dark roast profile in a somewhat burnt caramel-driven base. torked and quite fun. czar	3.9 Siboire Inconséquence on tap at winter warmer 2023, quebec city. hazy fairly dark amber-orange with a nice light beige cap offering some retention and lacing. tropical mangoes, obvious red wine barrels, bitter oranges, bitter flowers and herbs, pepper resins but not too sticky, clean fruity yeast action - remains in the « clean flora » world. moderate carbonation, light to medium body- oily; semi-dry yet very bitter woody-tropical-grapefruity-earthy finish. indeed a certain paradox or seems to - tropics meet wood and english culture. very enjoyable and super uncommon assemblage. czar	3.8 Siboire IPA Test #100 (Galaxy) fresh enough can that pours cloudy pale grey-golden with a very nice creamy off-white head offering good retention and lacing. loads of citrus, unmistakeable galaxy dose with nicely golden pineapples bits, pieces and juices (dry tho); tender bitter resins, never unbalancing, bitter rockets*TM, super clean yeast action, almost lagering. moderate carbonation, light body, dry tropical -resinous finish. a bit rough on the edges and could be more galaxy-driven/fragrant for a seemingly mono-hopped. still always a fun test in this series. neongolden	3.6 Siboire IPA Test #84: Citra, Motueka, Idaho 7 (473ml can from L'Axe du Malt, Quebec City) Pours quite hazy bright gold with a thick white head. Aroma of unripe mango, lime peels, grapefruit, fresh leaves, conifers, dank melon. Flavour is quite light and rather dry, citrus and unripe fruit dominating. Notes of lime, honeydew melon, green mango, some florals, retiring cereals, slightly chalky minerality, bone dry finish with soft lime peel and crushed leaf bitterness. Light to medium body, fairly high carbonation. Solid but a little less punchy than I remember this series being, especially in the mouth. Felt a bit APA-like but very easy to drink and refreshing.
