During the Christmas season in middle-ages it was popular for a drink known as a “wassail” to be served. Though modern interpretation of this tradition tends to be a punch mulled with spices it was more likely the case that in the middle ages the drink infused with spices was beer. Our Pumpkin Porter goes back to this tradition taking a porter recipe and adding 200 pounds of roasted pumpkin drizzled in molasses and dusted with spices, 36 pounds of honey and orange peel added to turn it into a beer perfect for sipping during the holidays.
