A Classic American Pilsner or CAP for short. Our pilsner is a pre- prohibition era recipe, named for the two Jackson breweries of that day, the Eberly Brewing Company and the Haenley Brewing Company. This recipe comes from the 1901 Americian Handy Book of Brewing by Whal and Henius. We have only used modern malt varieties and have maintained the malt to corn ratio, the higher hopping levels of the traditional American Cluster hops, as well as the delicate aroma of the noble Czech Saaz hops.
