Cento is Italian for 100. This wheat based beer that was fermented with 100% Brettonomyces as opposed to common brewer’s yeast that is typically used. It produces a bone dry, crisp beer with the typical earthym funky brett character (think Fuyu) with a slightly fruity, pineapple finish. Extremely limited!
