This year we had the opportunity to brew not one, but two wet hop beers. Sir Phobos is a blonde IPA brewed with German and Czech pilsner malts and local wildflower honey. A small amount of normally pelletized and processed Apollo hops were added to compliment the 30 pounds of Fresh Mosaic hops, harvested and shipped direct overnight from Loftus Ranches in Yakima, WA. Combined with the character of the wildflower honey, a range of tropical fruit and pungent grassy notes come through in both the nose and the flavor. Incredibly refreshing and light on the palate, this is one easy drinkin’ IPA.
