Your American Brewmaster lived, studied, trained and brewed in Berlin. He is a true fan of the traditional Berliner Weisse exemplified by the Schultheiss brand (now extinct). We don’t add hops so the Lactobacillus can create the mouth-puckering tartness and some wonderful fruity esters, the Saccharomyces drives down the sweetness and some Brettanomyces round out the flavor profile. True to the tradition style, this is made with yeast and bacteria brought back directly from Berlin!
