From the land of the rising Sun, comes this inspired Japanese IPA to keep the IPA on Tour on the move. Having no defined style guideline the brewers took inspiration from a range of styles and beers to come up with their idea on a Japanese IPA. Starting with a very light malt bill to create a delicate palate and golden/straw colour, they added 70kg of Jasmine Rice to assist in keeping things light and to theme. From there special hops were used like Japanese Sorachi Ace that gives flavours of lemon cheesecake and lemongrass, plus with the assistance of NZ hops to add freshness with the likes of grassy, lemon/lime zest and spicy characters. Combining a light palate and a decent amount of hops a medium bitterness was our target, the key to find balance between the polar opposites of big IPA and subtlety. We think the brew sits nicely in between maintaining the delicate traits of Japanese cooking with the much loved tradition of bitterness, alcohol and hops found in IPA!
