Belgian singel or enkel style ale made with barley and wheat malts, and Saaz and Northern Brewer hops. Fruity and distinctive, this is the lower-strength version of a tripel – called a singel or enkel – that the Trappist monks used to keep for themselves. We made two versions of this ale. This is Enkelfish T, made with Trappist ale yeast, and Enkelfish B is made with Belgian ale yeast.
