So here is a ‘safer’ beer for you: A nice IPA brewed with SIMCOE. One of our all time favourite hops, and this is our lovesong to its complexity. Pine, ripe berries, citrus and a big chunk of “I can’t define what it is, but I like it” makes this beer a classic. It has been done before, sure, but do you care? Are you, like us in love with SIMCOE?
