Homebrewers Tap Takeover 2015. Belgian Style DIPA. BREWER: Escarpment Labs - Richard. The goal with this beer was to highlight two yeast strains at once in a DIPA with Columbus and Citra hops, hopefully demonstrating that yeast can still have an influence on big, hoppy beers. We started the fermentation with a truly wild Ontario yeast isolated from apples by Escarpment Labs, then followed it up with the Vermont Ale strain to aggressively complete the fermentation.
