A blend of four different grains lay the foundation of this refreshing brew, leading to a medium bodied and highly quaffable ale. A traditional English ale yeast strain is used, lending a dry fruity note to the finish, with a blend of unique English hops bringing us home. These hops - a blend of Target, Challenger, and East Kent Goldings - lend a soft bitterness, with more earthy flavors compared to their more aromatic American cousins. Like all great English ales, the carbonation is on the lower end of the spectrum, allowing the complex grain bill and mild hop character to shine through. Over four pounds per barrel of local South Jersey honey was added to accentuate the sweeter note, with biscuit malts along for the ride to give us the beautiful copper leaning amber color, along with a slightly toasted, nutty note.
