The third standard beer is the Old Ale. It is a dedicated dark beer with lots of flavours that you would not expect in a dark beer. Dark beers normally have a burnt flavour from the dark malt, which almost tastes like coffee. You will not find this in our beer. It took me a long time to find the perfect recipe for this demanding beer. It is indeed easier to make a dark beer than a light, but to find the right mixture of malt-types and fementation technique is quite difficult, as all flavours are very intense and the balance shows the art of the brewmaster.
