Common descriptors are
Named for Larry "Pappy" Papkin and Matt "Sleepy" Franklin, who created the recipe...(That's where we got "Slappy" from)...or something like that. Anyway, this beer is a little different from the classic German Rauchbier (smoke beer). It is darker and a little more bitter. It is more of an American Smoked Porter. (Hence the Smoked Porter part!) The aroma is a blend of malt and smokiness, which can seem bacon-like and woody. The flavor will follow the aroma profile for the most part and also is a little dry/bitter because of the use of Black Patent malt. Think of this beer as a dry stout with the addition of bacon-like smokiness. Where does that smoked flavor and aroma come from? We use a generous portion of Bamberg smoked malt from Germany. Smoked malt is malted barley that is dried over slow-burning beechwood (just like smoking a rack of ribs). Smoked malts are also used in the creation of Scotch (which distinguishes Scotch whisky from Irish whiskey...that, and the 'e' at the end of the name). 35 IBU
