Emerson’s Gallifrey Pale Ale: Here’s a brew that’s out of this World but definitely brewed at Emersons. A brew that appears small but is really much bigger on the inside… From time to time Richard lets the brewers get a little loose and explore their passion and brew something that might not quite match style guidelines. Gallifrey Pale is just one of these beers, almost time travelling back to the use of very classic US high alpha bittering hops right throughout the boil, not a low alpha hop in sight. It is a brewer’s session ale, 4.3% alcohol, allowing a few more pints than usual after a days brewing – but packed with hop resin and a crisp assertive bitterness. Dunedin’s soft water which is so perfect for our pilsner has been treated with ‘Burtonising salts’ to imitate the more classic brewing waters of Burton-on-Trent and some classic American pale ale brewing locations to really bring through the hops. We didn’t spare the sonic screwdriver on this one. Biscuity, with toasted malt character on the mid palate and that crisp, assertive bitterness giving the beer a clean finish makes Gallifrey an ideal session beer.
