After a cool fermentation the mead was aged for 6 months in seasoned premium French oak barrels. Tasting Notes & Food Pairings: This slightly sweeter mead was made from 100% estate honey. The 2008 vintage shows mandarin orange, pear and ginger. The palate is perfectly balanced with natural sweetness and acidity. Pair with Canadian cheeses such as Dubliner, Osseau and aged cheddars. Drink chilled now or age until 2020.
