Cyril Fonchy, brewer : For my first batch as a pro, I wanted to create a beer which resemble me, but could also please everybody. As a gourmet chef, I have been looking for original raw materials. I played on texture and aromas for this Imperial Stout. My aim was to obtain a creamy product with a rather light level of alcohol. Without pretention, I first wanted to prove to the beer world that we can play with texture and aromas without raising the level of alcohol. To do so, I realized a beer using specific malts and I decided to associate with an original hopping of the Japanese Sorachi Ace. And I’m not done! It is subtly balanced by an infusion of vanilla sticks I deliberately aged in bourbon whiskey".
