Named for Diamond Head Crater in Oahu, this IPA has a beautiful lush aroma of pineapple and passion fruit. Besides the bittering addition, Mo-saic hops are the only type used. These vivacious hops are only available to me a few months out of the year due to their incredibly high demand. This year we were able to get our hands on some Mosaic pellets. This allows us to dry hop the beer in a very efficient manner. Instead of a hand-ful of whole flowers inside the keg, I dumped 6 pounds (1 Lb./ barrel) straight into the fermenter. This is my favorite hop to use in IPAs and I’m glad you were able to visit us while we have this gem on tap.
