We traveled to Pedersen Farms in the Finger Lakes region of New York to pikc up freshly picked hops for this brew. The hops have to be used right away of they begin to compost, compromising the quality of the hops. Since hops are only harvested once a year, nearly all hops used by breweries are dried after picking and then pelletized for ease of use and storage-ability. These Cascade hops were picked in the evening, stored in the brewery cooler overnight, and used to ’wet hop’ the next morning. We used our unfiltered pale ale as the base, since it is light enough to let the fresh hops shine through. Unlike Cascade pellets, which can have an intense grapefruit quality, these fresh hops have a softer and more floral aroma and flavor with a little bit of fresh grassiness.
