The malt bill for this beer consists mostly of a pale malt called Maris Otter, regarded as one of the finest brewing malts in the world. This is set off with generous quantities of Munich and Melanoiden malts, which add a lovely warm sweetness, intensify the maltiness of the beer and lend that deep reddish hue.
Our Malt comes from Warminster Maltings, a traditional Victorian floor malt house just down the road in Wiltshire. They produce the finest malts available and are a thoroughly nice bunch.
The hops in this beer are hops very close to our heart. Simcoe has been a long standing favourite at Wiper and True for quite some time, due to it’s gorgeous piney, plummy and citrus like characteristics.
We then took a punt on the new kid on the block - Mosaic. Mosaic is the daughter of Simcoe (with a hop called Nugget as a father) and is fast becoming revered by craft brewers in the States. It’s called Mosaic because of it’s multitude of flavours and aromas, all combining to create a wonderful, big picture. It’s known for citrus, floral notes, pine, earthiness, tropical fruits... the lot!
