This beer style comes from the NW German town of Köln. It uses a specific type of ale yeast that requires a lager period after fermentation. Due to this, many consider this style to be a ‘hybrid’ beer that blurs the flavor lines between ales and lagers. We were able to get our hands on yeast from the Päffgen brewery, the oldest remaining Kölsch brewery in Köln. Bready, faint bitterness, slightly fruity character from the yeast and Hersbrucker hops.
