Collaboration with Mikkeller. Fermented with SD Super Yeast 200 lbs of handpicked peaches from Schnepf Farms in Queen Creek, 125 lbs of white peaches from Agritopia Farms in Gilbert. The first person to contact us after the RateBeer announcement in January was Mikkelm who co-founded the Danish Beer brand Mikkeller. The friendship was almost instantaneous and we all agreed that a collab was in order. The beer was agreed to be a big dark ale, yet refreshing and to utilize an AZ ingredient. So, the Beards went to work dreaming up a concoction that used some AZ ingredients and would stand up to the world stage. In comes the AZ peaches! Here is the breakdown of the two 7 bbl batches that were blended together to make a harmonious, tongue soothing beer: Batch 1: A chocolaty imperial porter is the beer’s base, and Jonathan, in an act of pure insanity, put lactobacillus delbrueckii in 200 lbs of handpicked peaches from Schnepf Farms in Queen Creek, AZ. The fermentation lasted 3 weeks and they sure got SOUR! The peaches were added at whirlpool and the first batch was underway. Batch 2: We had a similar recipe as the first, and this time we allowed the batch to sour in the kettle for 24 hours. Then, we boiled and sent to ferment. Just after the peak of fermentation we added 125 lbs of caramelized white peaches from Agritopia Farms in Gilbert, AZ, just to make things peachy keen. Finally, the beer was lightly dry hopped with Amarillo and Galaxy hops for the added aroma of fresh peaches. Then we blended the two batches. Viola, now the glass holds the glory in front of you!
