NKJ is a session ale brewed with two yeasts, Brettanomyces and California ale yeast. When young, the bitterness and hop aroma from El Dorado, Cascade, Galaxy and Amarillo are up front and take charge. Over time, as we age this beer, the Brettanomyces will take hold and work it’s magic with funky tones of leather and tobacco. Enjoy it young and keep your eyes out for the aged version. For good Wilderness measure we aded 3 lbs of mesquite pods picked from those trees right behind the brewery!
