We then smoked 150 lbs. of malt in our custom smoker with peachwood. The smoke flavor in this has a sweetness similar to the applewood in Goin’ H.A.M. but with more distinctly "peachy" flavors, which we play up substantially with a large addition of pureed peaches. The dry finish almost replicates the flavor of the fuzzy peach skin while the sweeter smoke provides a grilled peach sensation. Look for the smoke to fade and the peach to increase as you advance through the glass.
