Incorporating tones of a Flemish brown with the intricate subtleties of a Flemish red as well as the flavors of a blackberry lambic, Black Briar integrates aspects of the most notable Old World wild beers. Characterized out of respect rather than definition, this American wild ale evelops all the traditional aspects of a wild beer: must, earthiness, funk, "barnyard", and of course, sour. In addition, this ale blends in a subtle sweetness without the use of pasteurization and has a rounded fruit flavor from aging on blackberries in the cask.
