A Saison that started off fermentation at a cool temp, and then we left the cooling jackets on the fermenter off and allowed the temperature to climb as fermentation proceeded. The aroma is full of grassy, banana, clove, bubble gum, and light floral scents. The flavor starts off with a great Saison character full of earthy spiciness and a crisp carbonation. Finishing very dry with a slight bitterness carrying through.
