Dacker Ale is malty and full-bodied. Perception of hop bitterness is very low. Hop flavor and aroma are also very low. The clean alcohol flavor balances the rich and dominant sweet maltiness in flavor and aroma. A very drinkable ale with no bitter aftertaste.

The Dacker Ale recipe is derived from a Strong Scotch Ale recipe brewed in Scotland as far back as the mid-1700’s. Scotland-born Duncan Kincaid brought the recipe with him when he came to the United States as a young man in the early 1880’s. Duncan modified the recipe to make the best use of grains and hops available to him in the central Adirondacks at that time. This recipe has been home-brewed in the Adirondacks by each succeeding generation of Kincaids.
