Otaru Pilsner is a deep golden-colored beer which is bottom fermented just like the pilsner beers produced in Pilsen back in the mid 1800's. This was the first beer to be produced which was clear and golden. It was so inspiring to the people of the area and later the world, that the clear glass beer mug came to replace the ceramic mug which was typical throughout the world. The production of Otaru Pilsner very closely matches the production methods used so long ago in Bavaria. The main points being very cold fermentation and lagering over a very long period of time. The long fermentation period at very cold temperatures provides for a very smooth beer with a very compact, dense head of foam. During this time the yeast gradually drops to the bottom of the tank which makes it unnecessary to filter. Otaru Beer's Pilsner, just like the pilsner beers of long ago still contains lots of happy yeast in each and every bottle and keg!
