The coolship was a large, flat, shallow tray on to which the boiling wort was pumped and allowed to cool down to a temperature of around 20c so the yeast could be pitched when the wort was pumped to the fermenting vessels. This stage of brewing was where the beer was most susceptible to airborne infection. The coolship has now been replaced by the plate heat exchanger for safer, faster and more efficient cooling. A golden beer, IPA in character and brewed using only pale and lighter-coloured malts to give a light and refreshing beer with a clean hop taste and a slightly citrus finish.
