I love well made carefully constructive smooth strong beer that uses natural ingredients that are rich and complex that has been cleverly balanced to hide the alcohol. I favor Belgian brown strong ales that balance with a malty chocolately taste and yeast that is cultured and taste to me either cheesy or meaty. These tend to be Belgian (not always though) but mostly (’TIJ and North Coast are great examples of exceptions to this.)
As for hops, I also love a good grapefruit sweet and bitter rind tasting IPA and a bit of coffee in my Stouts to add that touch of burned bitterness.
Sometimes Art is an accident. I would like to believe that some of the best brewing creations have occurred under similar circumstances...
