I am a believer that craft beer in the U.S. has gotten out of control, what with the craze centralized in over-hopping, astronomical gravity, and most importantly, over-flavoring. Of course, this is not to say that I dislike beer with "flavor," but I desire complexity and balance. I’d rather not my palate be dominated by hops, roast, tartness, or malt, but would drink a beer that has a lot going on in it yet isn’t over the top.
