Acidity or bitterness to balance sweetness from malt. Love any style of beer, but hate blandeness and - after a few years of beerloving - too much alchohol and the "prog rock"-etho of much "american microbrew" (too much flavor, too much of everything). It’s a cliche, but less is more - sometimes. Sex, beer and great much makes a good coupling.
