Lots of great info here in this thread.
My favorites are Nelson, galaxy, mosaic and any late harvest hop giving dank flavors, there are many varieties that will yield these.

A few helpful concepts
1. Try to contain the aroma using a pressure cooker which allows few of the volatile aromas to escape
