COMMERCIAL DESCRIPTION
"I really wanted to do something special for our 1000th batch at the original brewpub. Goose Island could have thrown a party. But we did something better. We brewed a beer. A really big batch of stout-so big the malt was coming out of the top of the mash tun. After fermentation we brought in some bourbon barrels to age the stout. One hundred and fifty days later, Bourbon County Stout was born-A liquid as dark and dense as a black hole with a thick foam the color of bourbon barrels. The nose is a mix of charred oak, vanilla,carmel and smoke. One sip has more flavor than your average case of beer. It overpowers anything in the room. People have even said that it’s a great cigar beer, but I haven’t yet tried a cigar that would stand up to it." Brewmaster Greg Hall;

Editor’s Note: Baudoinia Fulton & Wood Series offering (And the Low Storage entry from FoBAB 2012) is simply Bourbon County Stout aged in the same barrels. It has been alted as it offers no different recipe or barrel type simply the presence of a distillers fungus on the barrels that adds no distinct characteristic to the beer from the fungus itself except for possible oxygen exposure changes. While Brewers Intent indicates that they consider it a new beer, no true distinction aside from this oxidation amount and possible aging time differences separates the beers. It’s essentially a single barrel Bourbon County version something we have always treated as regular Bourbon County Stout in the past.

UPDATED: OCT 7, 2019 Aroma is coacoa nibs, licorice, dark chocolate, molasses and bourbon. Taste is dark, thick malts, caramel, chocolate, molasses and coacoa nibs. A nice warm licorice finish is here with a nice accent of bourbon whiskey.

UPDATED: SEP 23, 2019 Jet black. Thin tan head. Woody bourbon aroma. Rich mouthfeel. Has chocolate flavors with vanilla overtones alongside a pleasant wood note on the finish. Lingering bitterness. Hides the quite high ABV well. Really awesome stuff.

UPDATED: SEP 20, 2019 500ml bottle, 2018 vintage, 15.2% version. Rating #4000. Pours black with a small tan head. Aroma of bourbon, dried fruits, chocolate, figs. Taste is sweet, chocolatey, massive dried fruits, raisins, figs, caramel, oaky, bourbon, boozy warming finish. Full bodied, viscous, very smooth. For 15+% the booziness is quite well tempered. A truly spectacular beer.

UPDATED: AUG 5, 2019 Great bourbon barrel stout. 2017 vintage just a bit more pleasing to me than 2016 or 2018. Strong caramel and coffee overtones with hint of bourbon. Long lasting finish. Like to mix with a hoppy IPA about .25 to 1 to tone down aftertaste.

Sweet aroma of roasted malt, dark chocolate, caramel, bourbon, oak, vanilla and light smoke. Sweet flavour of roasted malt, dark chocolate, caramel, licorice, bitter coffee, vanilla, oak and mild smoke in a dry, bourbon warming finish. Full body with a thick, creamy, oily texture and soft carbonation. Lots of complexity, great for sipping. A world-class Impy.

UPDATED: JUL 4, 2019 Malt chocolate caramel aroma. Dark brown colour poor head and lacing. Malt caramel chocolate flavour with bourbon aftertaste. Smooth lingering palate.
