German style with a Yorkshire twist!
We acquired some authentic Weyermann Pilsner and Vienna malt as well as a stash of "proper" German Spalt hops to give our brew at least a semblance of authenticity, but then we went and ruined it by adding American Crystal hops at flame-off (as well as more Spalt)... Kölsch is generally only hopped once, at the start of the boil, so by first-wort, 60, 30, 5 and flame-off hopping we kind of gave that one a bit of a kicking straight off! We plead, however, that Crystal hops are vaguely allowed on account of them being part Hersbrucker (and part Cascade too, admittedly)...
