This special edition take on our Wild Brunette has a very limited availability. We brewed only 70 gallons of our standard recipe for Wild Brunette and pumped it into our special new fermenter outside, where we’re experimenting with wild beers. And what better beer to experiment with wild yeasts than a beer that already has “wild” in its name? People have been asking for it for years, and finally it is here! We pitched a strain of French Saison yeast along with some Brett yeast for primary fermentation. After it simmered down, it sat outside for a total of three weeks where it picked up some of Minnesota’s own Biota, which soured the beer in ways only it could. Belgian beers have been fermented this way for centuries. It is time to see what Minnesota’s biology can do to Minnesota-brewed beer! Malts Used: 2-Row, Munich, Chocolate, Aromatic, Wild Rice Hops Used: Warrior, Willamette Yeast: French Saison, Brettanomyces bruxellensis, Minnesota Biota
