High Voltage is a study of single hop brewing. Galaxy, a relatively new hop grown in Australia, is considered a “High Alpha” hop variety (14% A.A.) So we elected to add most of the 22 pounds of Galaxy in this beer later in the boil and again during the dry hopping process. This mostly late addition of hops keeps the IBUs to 50 (bitterness is quantified on a scale of “International Bittering Units” with 100 IBUs being the general maximum level of iso-Alpha Acid solubility in beer) and our heavy grain bill brings the alcohol content to 6.8%. Slightly higher alcohol content is one of the many tools we have to reduce perceived bitterness on the front end of the pallet.

So at 50 IBUs and 6.8% ABV the iconic passion-fruit and citrus aroma characteristics of the Galaxy hop really shines through
