Nearly all Pale Ales have several hop additions. The first addition is almost always at the start of the boil to give the beer its’ characteristic bitterness. The last addition is almost always after the boil during the whirlpool to give the beer its’ characteristic hop flavors and aromas. Classic brewing theory has always assumed that little to no bitterness comes from this last addition. Well, we wondered what would happen if you brewed a low gravity pale ale and added all of the kettle hops during the whirlpool. We knew that it would give the beer an enormous hop flavor, but would there be any bitterness? We started with Marris Otter, the very finest pale malt money can buy, added a small amount of caramel malt and went about our regular boil, but only added hops after the boil was over. 25 lbs. of a blend of some of our favorite hops were added to give the beer an enormous aroma and flavor...and hopefully some bitterness.
