In 1842 Josef Groll, the ’just hired’ brewer in Pilsen, Bohemia, brewed a light golden lager with local malt, hops from Saaz, and yeast he had clandestinely brought along from his previous employer in Munich. A new classic was born by the name of Pilsner Urquell (German for the fountainhead of Pilsen). Whoever has tried it will remember it for its golden coulur, pronounced maltiness, assertive bitterness and intense Saaz hop aroma. Our interpretation ofths beer classic is this month’s seasonal brew.
