COMMERCIAL DESCRIPTION
The beer Cuvée des Jacobins is unblended old lambic, aged for at least 18 months in (French) oak barrels from the cognac region. These oak barrels are called ’Foeders’ in Dutch. It has a robust character but is beautiful and sophisticated with a full body and overtones of vanilla, dried cherry, stone fruit and cocoa. It is a complex, beautiful sour beer.

UPDATED: MAR 31, 2020 Bottle. A- Cherry, mild cola, slightly dirty. A- Deep dark red color, clear liquid, off white head. T- Cherry, mild vanilla, mild cocoa, mild cola, subtle tartness, subtle funk. P- Medium body, average texture, average carbonation, balanced finish. O- 5 years old. Not too bad although I think it'd be better fresh. Nice strong dried cherry flavor and aroma. Cola notes strong when it's cold and gradually brings out some funk as it warms.

UPDATED: JAN 25, 2020 Cerveza de un color marrón rojizo; con un dedo de espuma de retención media. Carbonatación ligera y cuerpo aceitoso. Aroma a cereza, malta y algo de roble. En boca es agria, con un toque tostado y para nada amarga. No es lo mío.

UPDATED: DEC 14, 2019 Robe acajou. Un nez sublime un peu vinaigré. La bouche est complexe et laisse place à une belle acidité avec des notes de cerises aigres. La maturation en foudre fournit des Bretts et de belles notes boisées. Un petit bijou du style 'Flanders Red Ale'.

UPDATED: OCT 15, 2019 15/10/2019. Bottle from Saveur Biere. Pours dark red brown with an off-white head. Aroma of rich fruit cake, sour berries and cherries s, malt vinegar, toffee, wood, biscuit and a big dose of acidic tartness. Light roasted notes develop. Light sweetness, heavy sour, touch of salt. Medium to full body, oily texture, soft carbonation. The tartness just keeps building.

Taste: tart cherry, balsamic vinegar, ripe dark fruit, oak, little bit farmyard, medium-high sourness, medium-high sweetness, very little bitterness Palate: medium body, silky texture, medium carbonation, sour and sweet finish, some astringency Overall: very nice Flanders red with characteristic farmyard flavor. Sournees is little bit higher. Complexity and drinkability are good.

UPDATED: APR 24, 2019 Couleur rouge/brune bien limpide. Mousse légère et éphémère. Nez sur l'acide acétique, on est sur un mélange de vinaigre, de vin et de balsamique. C'est très chouette. En bouche l'acidité pète du feu de Zeus d'entrée de jeu, au point de masquer tous les arômes dans un premier temps. Passé le coup de fouet, on retrouve des fruits rouges (cerise) et de la prune. Avec le temps l'acidité sait se faire dompter, ce qui donne un ensemble plus équilibré que l'on aurait pu l'imaginer initialement. Pas vraiment sucrée, contrairement à certains de ses homologues (Rodenbach, Duchesse de Bourgogne, Queue de Charrue, etc...). Notes boisées plutôt discrètes. Pas ce à quoi je m'attendais, mais j'apprécie.
