COMMERCIAL DESCRIPTION
Phenomenology of Spirit is our first collaborative saison - brewed with friends at Tired Hands, McKenzie, and our sister brewery, Grassroots in Denmark. This unique, Dark Saison was primary fermented in french oak wine casks along with multiple strains of brettanomyces and resident microflora. All of our collaborative beers receive names in the likeness of the great philosophical work that suits them. In this case, Hegel’s masterwork, which posits a foundation of dialectic and consciousness - seems to summarize the Spirit of this Saison.

*11/6/2013 750ml corked and capped bottle poured into a Carton Teku. A~ dark oak like brown with a huge fluffy head and a lot of lacing. Very surprising for it’s age. S~ dark tart cherries rush the nose followed by roasty dark malts, finishing with oaky wine barrel funk. T~ a little less tart here, otherwise it pretty much follows the nose. I get a little burnt coffee and a lot of charred oak mid palette. Finishes where it started with a nice tart black cherry after taste that I never want to end! M~ perfect carbonation for a saison! Smooth as can be, a little thick and very refreshing. O~ this is surprisingly drinking great right now! Any more age though and I can see this getting a little watery like the early CD’s seem to be getting. So drink it now if you have it! Less tart than the newest version but the coolship would explain that haha. I believe this is the oldest HF I’ve had, maybe...? And the only beer that HF has corked? Absolutely amazing for it’s age! I really hope they do this again but slightly different every time. I’d have to say that "dark saisons" have to be my favorite hard to come by style. CD4, Edith, and this have blown me away. I love the complexity!

Sampled at 2011 RBWG. Pours dark amber with a small tan head. The nose is spice, light bubblegum and white pepper. The taste is the same as the nose with some light sourness in the finish. Medium bodied.

Bottle shared by Brendan, Huge Thanks ! Pours a roasted umber color with a finger of eggshell foam. The nose is upfront charcuterie. Lots of salami, musty wood, earthy malts and some composted layers of fruit. The palate follows the nose with great carbonation, leather, vinous fruit, musty wood a touch of barnyard funk. Soft and complex.

Bottle shared by yourefragile. Thanks a lot Michael! The beer is chestnut brown and fairly hazy. Small beige head. The aroma offers oak, malt, fruit, wild yeast. Funky with Flanders characteristics. Smooth with low carbonation. Currants and brown bread. Really tasty. ---Rated via Beer Buddy for iPhone

UPDATED: NOV 18, 2013 A fantastic dark sour. Bubbly carb nails the feel, tartness balances perfectly with soured grain & yeast. Wonderful.

Backlog, tasted on 08/13/2011. Bottle thanks to gn0sis. Pours dark brown, nearly black, pillowy tan head, nice lacing clinging to the glass. Fresh aroma, soft brett with sweet dark fruits, vinous elements, tickle of vanilla caramel on the end. Taste begins with a suggestion of caramel, dark fruits, transitions to roasted dark malts, smokey, light bitter hop finish, bright brett. Smooth body, pleasant and drinkable. Nice beer with a lot of interesting things going on.

750mL bottle, sent from Glouglouburp (thanks a lot, Dany), pours a deep dark amber-tinged brown with a small beige head. Aroma is quite complex, bringing out notes of leather, slight roast, some oak barrels, wild yeast, and some mild fruity tartness. Flavour is similar, starting off with notes of farmhouse, sight roast, and leather, leaving off on notes of leather, brett and then some vinous tartness that becomes more pronounced the more you drink. The wine is not really that noticeable until the very end of the mouthfeel, become more and more apparent with each subsequent sip. Elegant and complex, though not close to the elegance of Civil Disobedience #4 (another HF black saison). Excellent stuff.

Bottle from trade with MtGoat. Pours a near-black dark mahogany brown body with a big off-white head. Aroma is bretty wooden tones with dark malts, red wine, hints of citrus and straw. Taste is deep malts, citrus, bretty farmhouse notes, grass, hay, hints of straw and chocolate. Quite freakin’ delicious. Medium body, high carbonation. Great dark saison with a bretty touch; impressive again from HF! :-)
