COMMERCIAL DESCRIPTION
The basis for Sainte ni Touche is La Pasionaria Double IPA, a strong beer with a light sweetness balanced by an abundance of bittering and aromatic hops. After fermentation, the beer is transferred into used Chardonnay barrels. The barrel aging reduces the bitterness and covers the high alcohol content. The beer simultaneously becomes a bit lighter and more sour, making it more refreshing. We’ve called it Sainte ni Touche (Untouchable Saint) because the beer hides its real character. It’s only after tasting that one discovers that it’s not at all what one was led to expect.

UPDATED: JUN 18, 2020 Bottle: Poured a deep amber color ale with a large foamy head with limited retention and not much lacing. Aroma of sour notes with unrefined grainy malt notes is not all that pleasant. Taste is also a weird mix of vinous notes with some sour notes with unrefined grain malt notes also perceptible. Body is average with OK carbonation. Unbalanced sour beer with some off-flavours.
