COMMERCIAL DESCRIPTION
Artisan ale aged in oak barrels Translated from French as “old-tradition”, Vieille is our barrel-aged classical saison. Using time-honored techniques, our saisons employ traditional methods to restore complexity and the rustic character lost in modern day saison. Saisons were the original wild ales, brewed for the farmhands to be a refreshing and sustaining beverage. Each batch of Vieille takes on a soft Brettanomyces character and a complex acidity while conditioning in our large oak foeders. After conditioning in oak, we lightly dry hop the beer to finish it, lending a subtle citrusy hop aroma. Leading with lemon and lime citrusy hop notes, a subtle herbal spice, and a crisp tart finish, Vieille’s character epitomizes artisan saison.

UPDATED: JUL 4, 2020 Copenhagen 4/7 2020. 37,5 cl bottle from Mikkeller web-shop. Drawing of an old tractor on the label. Does not get any more rural than that. Pours opaque, hazy golden yellow with clumps of yeast whirling about. Medium-sized bubbly white head. Settles as thin patch of foam uable to cover the surface of the beer. No lacing. Aroma is intense with a strong yeasty presence and quite some sourness. Cheese and basement odors. Funky touch. Citrus, unripe berries. Light carbonation. Thin, oily, tingling texture. Flavor is medium intense with light sweetness followed by a strong citric sourness. Aftertaste is sour-ishly bitter. Lingers shortly. Finish is dry. Fantastic, yeasty nose - but a bit thin In flavor.

UPDATED: JUL 4, 2020 Bottle @ Højbjerg tasting. Nice head with good duration. Color is golden. Aroma and taste are rich fruits, flowers, malt, little wood, little lactose acid, citrus and has a nice long light sour finish.

UPDATED: MAY 3, 2020 Pours yellow golden with a thin white head. Aroma of spice, barnyard and slight fruit. Medium-thin bodied, the mouthfeel is crisp. Flavor is very light citric fruit, tending more toward spices and hay. Brett is moderately present giving it a soft horse funk and tartness. Low acidity and sourness. All in all a well balanced saison with a dry bitter finish.

UPDATED: NOV 8, 2019 Can. A- Funky, lemon, rubber. A- Yellow color, clear liquid, white head. T- Funk, lemon, subtle tartness. P- Light body, average texture, average carbonation, balanced finish. O- Really tasty. Right amount of funk balanced out by a citric tartness. Enjoyed drinking this one a lot.

Aroma of lemon, lime, some peach, gooseberry, slight Brett, sourness and subtle farmhouse yeast. Taste of lemon, lime, peach, some gooseberry, sourness, slight Brett, farmhouse yeast and subtle pepper. Light to medium bodied and a slick texture. A dry, slight sour, peppery fruit finish. More on the sourer side of a saison but I really don’t mind that. Classic saison qualities with sharp and fruity citrus flavours. Very nice.
