COMMERCIAL DESCRIPTION
Back in February of this year, we added several hundred pounds of raspberries to oak barrels containing mature sour beer. We then allowed the beer to re-ferment to dryness. The result is Atrial Rubicite, our first barrel aged sour beer to incorporate fruit. Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria, and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

UPDATED: MAR 21, 2020 500 ml bottle. Pours a very deep and dark red color and topped by a thin light pink head of foam that fades away quickly to a thin ring of bubbles. The aroma shows notes of huge, tart and jammy raspberries, seeds, black currants, wheat, funk, old hops, and soured oak. The flavor follows suit with the tart, jammy raspberries, black currants, cherries, and funk up front and backed up by the wheat and pale malts, old oak, and a bright sourness with a touch of acidity on the back end. Medium bodied with ample carbonation that leads to a sweet and tart raspberry, currant, wheat, and funky old oak on the finish. Really delicious stuff and I hope to have this one again.

UPDATED: AUG 4, 2019 Bottle shared at Lucky Bamboo. Thanks Andrew! Pours a deep burgundy red with a small bit of off-white pink foam that lingers as a ring around the glass edge. Lovely raspberry driven nose with some seed and skin and light balsamic notes as it warms. Oak with some light cream notes on the palate but raspberry drives the palate as well. Some mild seed astringency, good acidity and carbonation as well. Smooth and round with a refreshing finish. Raspberry flesh and skin coat the palate on the finish. Delicious.

In bocca è acida fruttata decisa, intensa, lunga e persistente. Corpo medio-alto, carbonazione media. Un'esperienza.

Colore rubino, schiuma media poco persistente, media carbonazione. Aromi di lamponi, lievi sentori lattici, legno. Il palato rispecchia il naso, ma la componente lampone è ancora più accentuata, il finale è secco e comunque raggiunge un suo equilibrio. Una birra birra decisamente al lampone che comunque mantiene un'ottima bevibilità.

On tap at BXL 2018. Pours slightly hazy, dark red colour with moderate pinkish head. Undescribable amount of raspberries in the aroma. Raspberry balsamico, raspberry seeds and so on. Really intensive and strong smell. Lots of raspberries at first. Raspberries, raspberry seeds in the middle. Raspberries and raspberry balsamico in the end. Lots of raspberries in rhe aftertaste too. Bit heavy and buttery texture. Taste is dominated only by raspberries.

Sample at the Shelton Festival. Pours a dark red color, with a big, frothy, pink head. The aroma is heavy raspberry, blueberry, vanilla, Greek yogurt, and lemon juice. Sweet and fruity, with a sharp, assertive tart flavor. Medium body, with an acidic, sharp, and thick mouthfeel. This is a very fruity, enjoyable sour.
