Brettanomyces fermented IPA

The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.

The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.

This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

UPDATED: JUN 4, 2019 Bottled 330ml. -from Pivoteka Zagreb. Hazy yellow/pale golden coloured, medium sized airy white head, citrus and brett in the nose. Modertae malty, fruity, citrusy and light bretty with rather high carbonation and dry fruity finish. Decent.

UPDATED: MAY 26, 2019 Pivo u flaši. Popijeno u Gourmet Shopu & Tasting Roomu 'Pötãman' u Premanturi. Herbalno hmeljna aroma sa laganom notom Brettanomyces kvasca. Tijelo je dosta vodenasto i nešto više gazirano.. Okus je dakle više lagerast , ali pojačano hmeljno gorkast.. ..tak tak ...dobro pivo za koncerte..

UPDATED: MAY 1, 2019 Bottle shared at home. Yellow colour small white head. Hoppy, bretty farmhouse smell, a bit held back. Taste is medium bitterness. Dry mouthfeel, faint phenols in the background. Easy drinking, fast finish.

UPDATED: APR 17, 2019 Bottle 0,33L.Foggy golden color with big, frothy white head. Aroma of sweet biscuits, vanilla with a gentle touch of brett. At the start of the sip, I get one strong, bitter kick in the mouth. I must say, I didn't expect that. Than bitterness slowly fade away and that reminds me of some Belgian saison beers. Kinda unique.

UPDATED: MAR 28, 2019 Čepované 0.1l v ostravském Beers no.1. Nevím co se zde stalo, ale pivo je pro mě největším zklamáním co se týče kategorie IPA za celou dobu co piva zkouším. Prázdné, pivo čiré, jen ten chmel to trochu zvedá... Divný...

UPDATED: FEB 24, 2019 Bottle from Beermerchants dot com. Pours reminiscent of a farmhouse ale. Light straw gold with light lacing for a head. Fruity like lemon and apple. There definitely a light tart mineral shot of brett to the nose. There's a fruit pastille sweetness that starts to creep through. It's a very pleasant nose overall. Real lemony on the tasting with sweet white grape juice and a chalky fondant tail. Very dry with the brett cutting through. Soft medium body with moderate sparkle. I thought this would be too tart and acidic initially. It turns out to be a light citrus-fresh IPA with a cute tart edge. Liked it plenty.

UPDATED: FEB 8, 2019 Bottle. Kept for 2 years. I wanted to let this develop to see what would happen. Turns out it went pretty bad. Sour like, very strange after taste. Next time ill drink it quickly.

UPDATED: DEC 29, 2018 330ml bottle. Pours a hazy mid-gold, with a moderate white head, which lasts fairly well. Plenty of brett funk in the aroma, along with leather and lime hops notes. Strong citrus hops and sourness up front, funky, leathery notes in the mid-palate. Dry finish, with light herbal hops notes. I'm not usually a huge fan of brett IPAs, but this works quite well.
