Notable Facts: Each year, after the temperature drops below 14 fahrenheit, they build an Ice Dome outside near the main kura building. It is basically an igloo inside of which the temperature stays about 28 F, with 90% humidity and no wind The low temperature means "nasty bacteria" cannot survive, and it allows them to make clean, pure, ultra-premium saké. Additionally, they separate the clear saké from the fermenting rice lees not by pressing, but rather by putting it into canvas bags and allowing the saké to drip out slowly overnight, with no pressure at all applied to the mash. The Cadillac of Daiginjo sake is Shizuku-style sake, the equivalent of wine made from free-run juice.

Small bottle drunk 8/4/17.
Clear, lucid, with some transluscency to it. Perhaps a slight enamel tint.
Soft, mellow, well-aged and mildly fruity with low tanginess, no coconut or melon and even very low nuttiness. Bright mandarin and passion fruit mix with soft vanilla and ultra-mild, slightly tapioca-like rice. Very aromatic, clean and with no sign of alcohol.
In the mouth it's juicy, bright, mild and clean with low nuttiness, bright fruit (citrus, passion fruit) and tons of interesting koji character, though I wouldn't go as far as to call this one funky. Very refined, elegant, light but yet packed with juicy, quenching flavors amidst a supple but drinkable texture. It had been so long since I thought about this sake (which was the holy grail of sakes back in the day) that it didn't even register when I ordered it. I was pretty blown away by this stuff and now it makes a lot of sense.

November 2017 - Tasting in Hackney. Bottle shared with big thanks to Leighton. As 'Ginga Shizuku Junmai Daiginjo Divine Droplets Sake', 15.6%. Pours water- or vodka-like, clear and colourless, no head and leaving legs on glass. Aroma is creamy, lots of aniseed and fennel, rice and vanilla, bubblegum, some baby oil. Body is smooth with low carbonation. Taste is vanilla and booze, minty, pear drops, subtle esters fighting against the booze in a way that gives an overall impression of smooth-ish premium vodka. I don't think sake is ever really going to be 'my thing' but this seems good for a sake. (6-3-4-4-13=3.0)

Bottle at LKS Mansions, thanks to the host! It pours clearish with a vague hitn of yellow. The aroma is earthy, quite savoury, vanilla, tapioca, lychee and some raw boozy/solvent hints. The taste is soft, sweet, oily, rice cake, tapioca, creamy, warming alcohol, bit of grass, mochi and a hint of passion fruit. Medium bodied. Not quite the wow of a 99/100 I was hoping for, but decent enough for the style.

Bottle shared at Leighton's place, 23/11/2017. Huge thanks to Leighton for this one. A clear watery, coloured pour with a yellow tinge, no head. Aroma is nice aniseed, vnailla, tampura, rice, solvent, . Flavour is composed of oily rice, fennel, rice, mellow alcohol, . Palate is mellow alcohol, light pithy. Rice. lingering coccnut.

Bottle shared in Hackney - picked up in Japan. Pours totally clear. The nose has creamy vanilla, white rice, biscuits. Medium sweet flavour with restrained alcohol, nice vanilla frosting, wheat bread, hints of melon. Full bodied, lightly oily. Fairly clean finish, nice warmth, touches of coconut, more creamy vanilla, pale bread, white sugar, a bit of smooth rice. Very drinkable stuff. I like it.

Bottle shared at Bodney Towers. Thanks to the L Dawg for this. Pours clear with a little green tinge. Aroma is rice, booze and a little aniseed, vanilla and bubblegum. Taste is rice, boozy grain with a little vanilla. Not bad.

Bottle. Crystal clear. Earthy pear, slight sweet rice husk, plum, and light alcohol in the aroma. Flavor is very similar, with some dragonfruit and vinous qualities. Lighter very soft velvet body.

Clear light yellow colour almost cristal clear water with a yellow note, with no head. Aroma is moderate to light heavy rice, fruity, pineapple ? light alcohol. Flavour is moderate to heavy sweet and light light acidic with a long duration, fruity, rice, tart note. Body is medium, texture is oily, carbonation is flat. [20120419]
